In an exclusive interview with Julianne Verma, Managing Director of Toorak Central Hospitality, we delved into the unique offerings and vision behind Élevé Restaurant and Privé Bar, located in the heart of Toorak neighbourhood.
Celebrating nearly three years of operation, Élevé has stamped their mark in the competitive food industry by focusing on quality, atmosphere, and a commitment to local sourcing.
The essence of Élevé
Named after the French word for “high,” Élevé is situated in the corner of High Street and features impressive high ceilings that enhance its warm environment.
The restaurant underwent extensive renovations to maintain its original aesthetic while incorporating modern design elements. Verma emphasized their commitment to preserving natural light and the building’s character throughout the renovation process.
The restaurant’s menu reflects an international flair, incorporating both Fijian and global cuisines. Signature dishes include soft shell tacos, spicy lamb pizza, and a unique breakfast offering called the Pawpaw Muesli Boat, which features a half pawpaw topped with house-made muesli, seeds, nuts, and yogurt.
They offer a delightful selection of muffins, croissants, and a wide range of pastries, ensuring there’s something for every palate. Élevé prides itself on using fresh locally grown ingredients, steering clear of pre-packaged juices in favour of freshly squeezed options.
Privé Bar: A Whiskey
Haven Adjacent to Élevé is Privé Bar, one as Fiji’s first dedicated whiskey bar. Open from Wednesday to Saturday evenings, Privé offers bespoke cocktails crafted from scratch without shortcuts.
The bar features two Happy Hours cleverly named “Double Happy Hour” for patrons looking to unwind after a long day. Their Double Happy Hours are from 5pm to 7pm, and 9pm to 10pm. Verma shared that the bar’s design includes repurposed timber from the original building, preserving its history while providing a stylish venue for social gatherings. The outdoor courtyard allows guests to enjoy al fresco dining while taking in the vibrant nightlife.
Challenges and Triumphs
Despite the challenges posed by rising costs of ingredients and staffing shortages—particularly for skilled baristas—Élevé remains committed to its culture of quality and sustainability.
Verma noted that while cheaper options exist, they refuse to compromise on health standards by resorting to packet juices. Instead, they focus on promoting locally grown produce.
With a predominantly female workforce, Verma highlighted the importance of capacity building within Fiji’s hospitality sector. She believes that more training opportunities are essential for developing skilled professionals who can meet industry demands.

As Élevé approaches its third anniversary, it stands as a testament to resilience in a challenging industry. With its focus on exceptional cuisine, a welcoming atmosphere, and community engagement, Élevé Restaurant and Privé Bar continue to elevate dining experiences in Suva.
